Ingredients

  • 1/2 yellow onion, peeled

  • 1 tsp coconut oil

  • 4 large eggs

  • 1/4 cup almond milk

  • 1 ear of corn, uncooked (or 3/4 cup frozen corn)

  • 1/2 yellow bell pepper

  • 1/2 tsp ground turmeric

  • bit of salt and pepper to taste

  • 2 3/4 oz (75 g) ricotta

Directions

  • Preheat oven to 350 F (175 C)
  • In a skillet, saute the onion in coconut oil until it is nicely browned. Whisk together the eggs and almond milk.
  • Chop the bell pepper. Cut off the corn kernels from the cob, or measure out the frozen corn.
  • Mix the vegetables, turmeric, salt and pepper with the egg/almond milk batter. Pour into a baking pan and dot the surface with ricotta.
  • Bake in the oven for 15-20 minutes. Serve immediately.

Notes

  • Can cook in a glass pie plate.
