Flavourful Corn Frittata

1/2 yellow onion, peeled
1 tsp coconut oil
4 large eggs
1/4 cup almond milk
1 ear of corn, uncooked (or 3/4 cup frozen corn)
1/2 yellow bell pepper
1/2 tsp ground turmeric
bit of salt and pepper to taste
2 3/4 oz (75 g) ricotta
Directions
- Preheat oven to 350 F (175 C)
- In a skillet, saute the onion in coconut oil until it is nicely browned. Whisk together the eggs and almond milk.
- Chop the bell pepper. Cut off the corn kernels from the cob, or measure out the frozen corn.
- Mix the vegetables, turmeric, salt and pepper with the egg/almond milk batter. Pour into a baking pan and dot the surface with ricotta.
- Bake in the oven for 15-20 minutes. Serve immediately.
Notes
- Can cook in a glass pie plate.
