Rhubarb Crumble
Ingredients
1 c. flour
3/4 c. oatmeal
1 c. melted butter
1 tsp. cinnamon
1 c. brown sugar
4 c. diced rhubarb
2 tbsp. cornstarch
1 c. granulated sugar
1 c. water
1 tsp. vanilla
Directions
- Mix flour, oatmeal, brown sugar, butter and cinnamon in a bowl to make the crumble.
- Put half of this crumble mixture in a 9 in. pan and cover it with the rhubarb.
- Combine cornstarch, sugar, water, and vanilla in a saucepan and cook on the stove-top until thick and clear. When done, pour this over the rhubarb in the pan.
- Cover the rhubarb with the remaining crumble.
- Bake at 350F for 30 minutes or until golden brown.

- I like to pair this with a big scoop of vanilla ice cream on top!
