Rhubarb Crumble

Ingredients

  • 1 c. flour

  • 3/4 c. oatmeal

  • 1 c. melted butter

  • 1 tsp. cinnamon

  • 1 c. brown sugar

  • 4 c. diced rhubarb

  • 2 tbsp. cornstarch

  • 1 c. granulated sugar

  • 1 c. water

  • 1 tsp. vanilla

Directions

  • Mix flour, oatmeal, brown sugar, butter and cinnamon in a bowl to make the crumble.
  • Put half of this crumble mixture in a 9 in. pan and cover it with the rhubarb.
  • Combine cornstarch, sugar, water, and vanilla in a saucepan and cook on the stove-top until thick and clear. When done, pour this over the rhubarb in the pan.
  • Cover the rhubarb with the remaining crumble.
  • Bake at 350F for 30 minutes or until golden brown.

Notes

  • I like to pair this with a big scoop of vanilla ice cream on top!
