The classic oatmeal chocolate chip cookies but as a thick and gooey bar.

Ingredients

  • 1 c. butter (room temperature)

  • 1 c. packed light brown sugar

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 2 tsp. vanilla extract

  • 1/2 tsp. salt

  • 1 tsp. baking soda

  • 1 tsp. baking powder

  • 1 1/2 cups all-purpose flour

  • 2 c. rolled oats

  • 2 c. chocolate chips

Directions

  • Preheat oven to 350F. Lightly grease a 9 x 13in. pan with cooking spray.
  • In a mixing bowl beat together the butter, light brown sugar, and granulated sugar until smooth.
  • Add the eggs one at a time, mixing after each. Add and mix the vanilla.
  • In a separate bowl combine the salt, baking soda, baking powder, flour, rolled oats and half of the chocolate chips.
  • Add the dry ingredient mixture to the wet mixture and stir until combined.
  • Spread 1/2 of the cookie dough into the bottom of the prepared pan. Sprinkle the remaining half of the chocolate chips on top. Then carefully press the remaining cookie mixture on top of the chocolate chips.
  • Bake for 25 to 30 minutes or until golden brown. Allow it to cool before cutting into squares.

Notes

  • Instead of using half of the chocolate chips for the middle layer in the bars, we like to just mix the full 2 cups into the dough. Loads of chocolate in every bite!
